My favorite healthy recipe!

My friend, Sara, brought this Black Bean Salad over for lunch the other day...LOVE IT! I've had other recipes similar but this one is all healthy! The best part is you can have it for a snack or dress it up and make a complete meal out of it. This recipe is so easy and it makes alot too making it a great "go to" when you want something now (preventing you from maybe grabbing something less healthy ;0)



Ingredients:
2 cans black bean, rinsed & drained
1 can corn, drained
1 can diced tomatoes, drained (or 2 tomatoes, diced)
1 red pepper, diced
1/2 cup cilantro, chopped
1-2 avocados
6 green onions, chopped
1/2 cup olive oil
1/3 cup lime juice
1 clove garlic, minced
dash of salt
dash of cayenne pepper

Stir together, lime juice, olive oil, garlic, salt and cayenne pepper

Don't forget to drain and rinse your black beans!

Combine remaining ingredients and pour dressing over the top! Enjoy by the spoonfull or...

Wrap it up in a whole wheat tortilla with some shredded chicken and you've got an awesome meal!

I've been MIA...Getting healthy!

Ooppss...it's been 2 months since my last post! Guess the holidays got the best of me! However, I've also been super busy working on my "new" healthy lifestyle. Been going to they gym almost everyday and trying out new yummy (and healthy!) recipes. I'm hoping I can keep up and post something everyday. Today I'm going to post a few recipes (not all have pictures) that I have tried out recently. I hope you enjoy!!

First up...I'm drinking this right now! YUM!

GREEN SMOOTHIE

Ingredients:
Banana(s)
1/2 cup Frozen Mango
1/2 cup Frozen Peaches
Spinach leaves
Ice
Water

Combine banana, mangos, peaches and just a splash of water in a blender (I love my Magic Bullet!)

Add a little bit of ice and a handful of spinach.
Continue blending until completely smooth.

You really can't taste the spinach leaves. This smoothie really is filling and super healthy! You can mix up the fruit however you like, but using bananas as a base works best. Try adding in strawberries or blueberries or kiwi!! Enjoy!!
